Egg Roll in a Bowl

As I mentioned before, bowl recipes are one of my favorites, because you throw everything together into a bowl and serve it. There is something comforting about it - just me, my bowl and a fork. LOL.
I am a big fan of this one, because I used to love egg rolls but haven’t been able to enjoy them because of my gluten sensitivity. Give it a try and let me know what you think.

The one thing I make every week - shredded chicken

Yup, that’s right. I make shredded chicken every week. It’s so easy to make and so versatile. I can pair it with some veggies, I can throw it in a buddha bowl, or it can go on top of a salad.
Here are 2 ways to prepare it - on the stovetop or in a slow cooker. I am partial to the slow cooker version, because I can just walk away and it works with frozen chicken, too.

Thai Turkey Burger - a new twist on an old classic

Blueberry Kale Salad

I love salads that combine veggies with fruit. There is just something about a slightly sweet and salty combination that I really enjoy. Take this Blueberry Kale Salad for example. You have hearty and earthy beets and kale, together with sweet and tangy blueberries, and some pumpkin seeds for a crunchy kick. It is sugar-free and low glycemic. So if you are prediabetic or have problems with insulin resistance, give this salad a try!

Open Face Sushi

Do you love sushi as much as I do? It is so delicious, and the rolls look so cute neatly arranged on a beautiful plate. Have you tried making your own sushi on the other hand? Yea, not so pretty. I tried it and let me tell you, it was a hot mess. It tasted good, but it looked smushed and messy, because my attempts at rolling and then accurately cutting the rolls failed miserably. Oh well.
