Green Coconut Ginger Juice

Y’all, this is my new favorite smoothie/juice. It is so refreshing, light, and simple - I love it!!! The crazy thing is, it doesn’t contain any fruit. So if you are prediabetic, have high blood sugar levels or insulin resistance, this smoothie is a great option for you.

You can drink it for breakfast as a meal replacement or as a refreshing snack. I have been drinking a glass of this in the afternoons. It’s so refreshing when it’s hot outside - the perfect little pick-me-up.

Green Coconut Ginger Juice
1 serving

1/3 cup Organic Coconut Milk (from the can or carton)
2/3 cup Water
1/2 Lime (juiced)
1 cup Baby Spinach
2 tsps Ginger (grated)

Combine all ingredients in a high-speed blender. Blend until very smooth.
Enjoy immediately as is, or strain through a fine mesh sieve to remove the pulp.

NOTES:
Make it Thicker - Add avocado, greek yogurt or frozen cauliflower.
Not much time - I have thrown a small piece of ginger into the blender without grating it.
Want more veggies - add some celery and cucumber.
