The best glutenfree bread I have made so far

When I found out I had a problem with gluten a few years ago, I went on the hunt for a good gluten-free bread recipe. Well, you probably know that there are a gazillion gluten-free bread recipes on the web. Some were way too complicated, so I didn’t even attempt to make them. Some were total failures (it’s like I made a brick and not a loaf of fluffy bread. LOL). And some have become new go-to recipes, like this one.

It is also super-simple which I absolutely love!! So give it a go, and let me know what you think.

Grain-Free Flax Bread
(10 servings)

2 cups Ground Flax Seed
1 tbsp Baking Powder
3/4 tsp Sea Salt
5 Egg (room temp)
1/2 cup Water (room temp)
1/3 cup Coconut Oil (melted)

Preheat oven to 350ºF (177ºC). Grease the inside of a loaf pan or line it with parchment paper.

In a medium size bowl, mix together flax, baking powder, and salt. Use a whisk to stir until well combined.

In another bowl, beat eggs with a whisk for 30 to 60 seconds. Add water and coconut oil, mixing until combined.

Add wet ingredients to dry and stir until combined. Let the batter sit for 1 to 2 minutes to thicken slightly.

Pour batter into loaf pan and smooth out the top with a spoon. Bake for about 50 minutes, or until the top feels set and the loaf is browned.

Once cooled, slice and store in the fridge or freezer.
