A healthy breakfast is key when times are busy and when other meals might not be the best. Here is a simple breakfast recipe that can easily be made ahead of time, travels well and is delicious. As you can see, I am reusing various glass jars, but any storage container will do.
Peanut Butter Overnight Oats 4 servings - for the entire family or for 4 days :) 2/3 cup all natural peanut butter (divided) 1-2 Tbsp maple syrup 1 1/2 cups unsweetened almond milk 2 cups oats (quick) 2 Tbsp chia seeds 3-4 cups strawberries, finely chopped (I used raspberries in this batch)
Add half of the peanut butter and the maple syrup to a mixing bowl. Slowly whisk in the almond milk until combined. Stir in the oats and chia seeds until combined. Cover and let sit for 3 hours or overnight. After 3 hours, divide the peanut butter oats between 4 jars and top with equal amount of strawberries and the remaining peanut butter. Store covered in the fridge up to 4 days.
